What are you making for your new years party?

I have been so busy lately and after Christmas the last thing I have on my mind is making a big meal, after unloading my Christmas cash stash on a few last minute gifts for Connor the budget is a little slim this time of year as well. I've been thinking and thinking what on earth will I make for my New Years guests that would not only be fast and easy but affordable. I recently got a little gift package from Velveeta that included a bunch of great recipes, and it hit me Velveeta is not only delicious but its the perfect cheese to make fabulous and affordable party meals!

It's been a very long time since I bought a "loaf" of Velveeta. As a child my mom would buy the spicy Velveeta loafs and I would cut off a chunk after school and melt it into the perfect and quick cheese dip. So I thought why not make my favorite cheese dip from my childhood, what could be simpler, yummier, and cheap?! Though you still can get the flavored Velveeta(Mexican Mild is my personal favorite) I ended up getting a plain 32oz loaf. I also picked up some canned green chilies, which are usually located near the taco ingredients. All I did was cut the loaf in half, stick it in a small pot on the stove and start melting it, and add a small can of drained green chilis to the cheese slowly until the cheese was a spicy as I wanted it. In the end I ended up with a delicious cheese dip for only a few dollars that would serve a big crowd. The second half of the loaf was reserved to cut into small cubes to melt for Connor for his crackers.

Cheese dip is only one of hundreds of ways you can use your Velveeta. Velveeta also makes amazing mac and cheese, pastas, casseroles, and something you may have never thought about but I make Connor little sandwiches for lunch quite often and if you slice your Velveeta thin it makes for the perfect melted cheese on a warmed sandwich. Actually Velveeta can be added to almost any dish that calls for a meltable cheese. I've even melted it over my tacos at times!

I must admit, I have never tried Velveeta, but after reading your review, my mouth is watering for the dip. I checked their website and they do have some nice recipes (the Cheesy Chicken & Broccoli Bake looks really good). I'm always looking for new recipes, so I think I'm going to give Velveeta a try. I make a similar dip to your velveeta dip - I just add Rotel tomatoes w/ green chilis to it-
Another great thing to make with it is Sausage bread - simply brown a pound of ground sausage, drain and then melt the velveeta into the sausage- take a loaf of french bread and slice it down the middle (like they do at Subway) - put the sausage/cheese mixture in the middle - wrap in foil and heat at 350 for 5-10 minutes until heated through - makes a great breakfast/bruch type of item

The best fudge is made with velveeta. Here is the recipe. People think I'm lying when I tell them what is in it.
1/2 pound velveeta
2 sticks butter
1 teaspoon vanilla
1 cup nuts
2 160z packages of powdered sugar
1/2 cup cocoa
spray 9inch pan with no stick cooking spray
Over medium heat melt cheese, butter and add in vanilla
In a bowl sift together sugar and cocoa.
Pour cheese into sugar mixture and stir until completely mixed.
I find it easier to use my hands to mix because it is so stiff.
Pat firmly and evenly into pan and blot excess butter with a paper towel. Add nuts ontop. Refrigerate for 30 minutes and then cut into squares.

There are many uses for Velveeta. By far my favorite is the most simple - melt it in a small crockpot with a can of Ro-Tel chopped tomatoes. Serve hot with tostito chips! It's gone in a Flash!

My husband makes dip with it. But I mix up hamburger, egg, crackers and spread it on french bread. For the last 5 minutes of baking, top with Velveeta slices. I would cut this into finger size bites for a dinner party.

This is what we love to do with Velvetta and we would serve this at a dinner party:

1 1/2lbs hamburger
8oz Velveeta
about 4-5 cups Cubed Potatoes/Hashbrowns
1/2 chopped onion
1 packette Taco seasoning
Sour Cream
Guacamole

Cook hamburger till done. Add tators and onions till tender and crispy.
Mix in taco seasoning and velvetta. Put into a 375 oven till cheese is melted throughly.
Before serving top with choice of sour cream and/or guacamole.
So good!

P.S. For the last few minutes I like to change the oven over to broil to make the top crispy. It is a personal preference.

We also like to melt it with a can of hot chili for a dip with tortilla chips.

I use Velvetta several times a week. We go through it likes it free. I use it to accent my breaded cauliflower, make sausage cheese gravy for over the Turkey and Bacon. I melt it for chips. We make grilled cheese and of course you have to melt a little over apple pie. Thanks for the giveawasy.
